Margaret Nicklas says about this recipe that she is ...not sure there is anything unusual about it but we sure loved it our house. We called it 'Grandma Nicklas' Stuffing' and had it every year with our Thanksgiving turkey and usually with our Christmas dinner. Our Grandma Nicklas was Mary Sakasits from Tobaj. She was married to Charles Conrad Nicklas and they settled in Catasauqua, PA.



GRANDMA NICKLAS’ STUFFING

Ingredients:
  • loaf (20 oz.) white bread, cubed
  • 2 large stalks celery, diced
  • 1 medium onion, diced
  • 2 Tbsp; parsley, fresh;
      or 3 Tbsp; parsley, dried
  • 2 eggs
  • 1/4 cup of water
  • pepper, about 1/2 tsp., or to taste
  • 1/2 stick butter or margarine
Preparation:
Melt butter in a large, heavy pan over low heat. Sauté onion and celery in the butter, keeping the lid on the mixture so it steams, keeping heat low.

Add cubed bread and stir well. Steam with lid on over low heat about 10-15 minutes. Remove from heat. Add pepper and parsley to bread mixture and mix well.

Beat eggs until frothy. Add water. Beat again. Add egg and water to bread mixture and mix until moistened. Form balls and stuff chicken or turkey.
