Vanessa Bammer Sandhu's grandparents are our latest source for
Burgenland-based recipes. The grandparents come from Inzenhof, Eisenberg an der Pinka,
Woppendorf, and Kemesmál, Hungary (near Luising, Burgenland), and all settled in the West
Coplay/Coplay/Northampton area of the Lehigh Valley in PA. Vanessa says about the first recipe,
This is one of my favorite things my Pop Pop would make for us. It was called 'green pumpkin
soup'. I know it may sound odd, but I assure you, it tastes amazing!

8-10 lbs. green pumpkin | 1/2 tsp. salt |
water, as needed | 1/2 c. vinegar |
3 c. sour cream | 6 heaping tsp. flour |
1/2 c. lard | 1 large onion, diced |
1/2 tsp. paprika |
Peel pumpkin and rinse. Shred the pumpkin into a soup pot, then add salt, mixing well. Cover pumpkin with water and add vinegar. Simmer till soft, stirring occasionally. While pumpkin is simmering, put sour cream in a sauce pan on low heat and add flour, stirring out the lumps. When warm and smooth, add to pot with the pumpkin. In lard, fry the diced onion, with paprika and a bit of salt, until tender. Mix with pumpkin and stir occasionally. Season to taste and serve with buttered bread.
